Green asparagus with ham is excellent as a main course, but also makes a good side dish to hearty dishes. The short, thin asparagus spears are best for this recipe.

For the asparagus and ham rolls

For the asparagus and ham rolls

  • 500 g green asparagus (thin)
  • 150 g Parma or Serrano ham
  • 1 organic lime
  • Rapeseed oil
  • Salt
  • Sugar
  • Pepper

Required utensils

  • Frying pan
  • Peeler
  • Cooking pot
  • Steaming insert

Wash the asparagus thoroughly and cut off the woody part of the ends.

Cook the asparagus in a saucepan with a steamer insert for about 3 to 4 minutes until al dente.

In the meantime, wash the lime hot and grate about a teaspoon of the lime zest with a fine grater. Cut the lime in half and roughly squeeze one half over a bowl. Add the lime zest and season the dressing with salt, sugar and pepper.

Rinse the asparagus with ice-cold water so that it retains its color and then drain it.

Then mix the dressing and the asparagus properly together and let it sit for 15 minutes.

Roll each three to four asparagus spears in a slice of ham. Drain the asparagus a little beforehand so that not too much marinade sticks to it.

Heat some canola oil in a frying pan and fry the asparagus rolls all around until lightly browned.

Then arrange the asparagus-ham rolls on a platter and serve. Your green asparagus rolls with ham are ready!
Tip / Note:

With a quick and easy hollandaise sauce, the asparagus rolls are also suitable as a full main course.
