Juicy brownies are one of the most delicious desserts you can enjoy in your life. And the best part is that you can easily make these delicious brownies yourself. You don’t need any special ingredients for this. As an amateur baker, you probably already have most of the listed components in your house anyway. Whether you enjoy them plain with a scoop of vanilla ice cream or with a delicious coffee: This simple recipe for brownies will delight both you and your guests.

We all love brownies and everyone has their personal favorite recipe. Even though brownies are now available as a ready-made mix in the supermarket, they only taste really good fresh from the oven and baked by yourself. The beauty of them is that you can easily customize them to your taste. By the way, these little treats are great for freezing and will keep in the freezer for up to two months.

For the brownies

  • 250 g butter (salted)
  • 200 g sugar
  • 200 g whole cane sugar / muscovado
  • 150 g dark chocolate (70% cocoa / chopped)
  • 150 g milk chocolate (chopped)
  • 150 g flour 405
  • 75 g dark cocoa powder
  • 50 G cocoa nibs
  • 5 eggs (size M)
  • 1 tsp vanilla paste or extract
  • ½ tsp salt flakes

Preheat the oven to 180 °C (convection oven 160 °C, gas 4) and line a rectangular baking pan (approx. 20 cm x 30 cm) with baking paper.

Melt the butter together with the dark chocolate in a large bowl over a bain-marie while stirring. Once liquid: Remove the mixture from the heat, set aside and allow to cool slightly.

Whisk together the sugar, eggs and vanilla extract until smooth. Then stir this into the cooled chocolate-butter mixture.

Sift the flour and cocoa powder into the batter, gently fold into the mixture and add the salt flakes. Finally, fold ¾ each of the chopped milk chocolate and cocoa nibs into the brownie batter. Pour the mixture into the prepared baking pan, smooth it out and sprinkle the remaining milk chocolate and cocoa nibs on top.

If you like your brownies rather soft, bake them for 25 or 30 minutes if you prefer them a bit firmer.

Remove the warm and moist brownies from the oven and let them cool completely in the pan. Then cut into small squares and enjoy. Ready are your delicious, moist and easy homemade brownies!
Tip / Note:

In an airtight tin, your delicious brownies will stay fresh for up to a week. If you freeze them, you can snack on them for up to 2 months. But let’s face it, you won’t be able to resist them for that long.

Tips for extra moist and delicious brownies

Brownies are truly one of the easiest baking recipes you can imagine. Nevertheless, there are also with them some tips and tricks, so that your homemade brownies succeed even better. For this reason, you will find here some advice to make sure you succeed in our recipe for delicious brownies.

Do not skimp on butter

The high fat content of the butter not only serves as a flavor carrier, but also provides the incredible juiciness of your brownies. That’s why you shouldn’t skimp on butter. So if you put a few grams too much in the bowl when you weigh it, it’s better to leave it in the bowl.

The right sugar

If your brownies keep getting too dry, it could be because you’re using the wrong sugar. In almost all recipes, muscovado or whole cane sugar is added to the brownies. The advantage of this type of sugar is that it contains much more water than the white, refined household sugar. The more moisture we incorporate into the batter, the juicier your brownies will be.

Hot chocolate = hard brownies

Once the chocolate has become liquid together with the butter, you should let the mixture cool well for 15 to 20 minutes before mixing it with the rest of the ingredients. This tip is often ignored, but makes all the difference if you want moist brownies. So remember: If the chocolate is hot, you bite down on hard brownies.

A juicy dough is made by hand

Delicious brownies are basically made from a compact dough. However, using a food processor may incorporate too much air into the batter and cause the brownies to become dry. For this reason, you should avoid machine assistance and mix your dough by hand. I myself use a simple silicone dough spatula for this purpose.

Not too long in the oven

To keep your brownies nice and moist, don’t leave them in the oven too long. You should bake them in the oven for a maximum of half an hour at 180 °C. However, depending on the oven, this time can be adjusted forward or backward by 5 minutes.

Water bath: Juicy to the brim

If your brownies get too dry around the edges of the baking, a water bath will help. The water keeps the heat away from the metal and produces a particularly moist baking result. The water bath extends the baking time by 5 to 10 minutes. This little extra effort is worth it, however, and your homemade brownies will be consistently moist.

Chopped nuts round out your delicious brownies

Brownies are famous for their juicy soft consistency. Adding a few chopped nuts gives the tasty morsels extra bite that perfectly complements the flavor. I prefer to use almonds, hazelnuts, pecans or macadamia nuts. You can either add them directly to the batter, spread them over the top, or both.

Crumble and blueberries – A real explosion of pleasure

The tart blueberries add a very special touch to your brownies while balancing out the sweetness of the cakes a bit, while the sprinkles give your brownies that certain crunch factor. Finally, just add a good helping of sprinkles and blueberries over the batter and you’ve given your homemade brownies a personal touch and an interesting zing.
