Do not skimp on butter
The high fat content of the butter not only serves as a flavor carrier, but also provides the incredible juiciness of your brownies. That’s why you shouldn’t skimp on butter. So if you put a few grams too much in the bowl when you weigh it, it’s better to leave it in the bowl.
The right sugar
If your brownies keep getting too dry, it could be because you’re using the wrong sugar. In almost all recipes, muscovado or whole cane sugar is added to the brownies. The advantage of this type of sugar is that it contains much more water than the white, refined household sugar. The more moisture we incorporate into the batter, the juicier your brownies will be.
Hot chocolate = hard brownies
Once the chocolate has become liquid together with the butter, you should let the mixture cool well for 15 to 20 minutes before mixing it with the rest of the ingredients. This tip is often ignored, but makes all the difference if you want moist brownies. So remember: If the chocolate is hot, you bite down on hard brownies.
A juicy dough is made by hand
Delicious brownies are basically made from a compact dough. However, using a food processor may incorporate too much air into the batter and cause the brownies to become dry. For this reason, you should avoid machine assistance and mix your dough by hand. I myself use a simple silicone dough spatula for this purpose.
Not too long in the oven
To keep your brownies nice and moist, don’t leave them in the oven too long. You should bake them in the oven for a maximum of half an hour at 180 °C. However, depending on the oven, this time can be adjusted forward or backward by 5 minutes.
Water bath: Juicy to the brim
If your brownies get too dry around the edges of the baking, a water bath will help. The water keeps the heat away from the metal and produces a particularly moist baking result. The water bath extends the baking time by 5 to 10 minutes. This little extra effort is worth it, however, and your homemade brownies will be consistently moist.
Chopped nuts round out your delicious brownies
Brownies are famous for their juicy soft consistency. Adding a few chopped nuts gives the tasty morsels extra bite that perfectly complements the flavor. I prefer to use almonds, hazelnuts, pecans or macadamia nuts. You can either add them directly to the batter, spread them over the top, or both.
