Green asparagus and cheese are a great duo. In Germany, however, green asparagus is overshadowed by its white relative. However, on the world stage, the benefits and taste of green asparagus has long been discovered, which helped him to get the title of the world’s most popular variety of asparagus.

Unlike white asparagus, green asparagus rarely needs to be peeled. Most of the time, it’s enough if you cut off the woody ends.

For the gratinated asparagus

  • 1.6 kg green asparagus (thick spears)
  • 200 g medium Gouda
  • 100 g butter
  • Salt
  • Pepper
  • large casserole dish

First, preheat the oven to 200 °C (convection oven: 180 °C. Gas: level 3).

Wash the asparagus thoroughly. If necessary, peel the lower third and cut off the woody ends.

Then pre-cook the asparagus in salted water for 5 minutes.

While the asparagus is cooking: grease the baking dish with a little butter, grate the cheese and cut the remaining butter into small flakes.

Remove the asparagus from the water, place in the baking dish. Spread the cheese and butter flakes on the asparagus and then season with salt and pepper.

Now bake the asparagus in the oven for about 15 minutes. Your baked green asparagus is ready!
Tip / Note:

If you like your asparagus firm to the bite, you can avoid pre-cooking it in the crock pot and save yourself a bit of time.
