This recipe was passed down from my grandma and has been a festive dish in my family for generations, especially served at Christmas, New Year’s Eve, or as a super delicious lunch on a gloomy day. Although herring salad is classically prepared with whole fillets, you can cut them into bite-sized pieces. By the way, it is perfect as a hangover breakfast after the holidays.

In this recipe, I use fresh ingredients to create a wintry dish that also gets a slight tartness from the addition of apple, dill and mayonnaise. The dressing is made from cream, mustard, vinegar and spices and provides a perfect balance of sweetness and acidity. The herring salad with apple tastes great as a delicious side dish with potatoes or as a main course and also cuts a fine figure at the buffet. You can enjoy it as a spread or snack between meals. The ingredients for the classic herring salad

  • 4 pieces pickled maties herring fillets
  • 1 small onion
  • 1 spring onion
  • 1 apple (green)
  • 1 gherkins
  • 1 – 2 tsp dill (fresh or frozen)
  • 100 g sour cream
  • 100 g sour cream
  • 50 g mayonnaise
  • 1 tsp lemon juice
  • Pepper
  • Salt
  • Apple cider vinegar
  • Sugar

Required utensils

For the salad, briefly rinse the matjes fillets under running water and pat dry. Then set aside on a paper towel for later use.

Peel and finely dice or chop onion and cucumber.

Wash the apple, quarter it and also dice it and put everything in a bowl.

Cut the herring in half again lengthwise and add to the bowl as well.

For the salad cream: Mix sour cream, sour cream, mayonnaise, lemon juice, a little sugar and dill and season with apple cider vinegar, salt and pepper.

Add the salad dressing over the remaining ingredients and mix everything well. Season again briefly and let stand well in the refrigerator for 15 minutes. Ready is your herring salad like from grandma.
Tip / Note:

If you want a lighter salad dressing, you can use yogurt instead of sour cream. To top it off, fry a few fillets in a pan until crispy and serve as a side dish.

What is the shelf life of herring salad?

When you buy herring fillets from the fish counter, they are raw fish. For this reason, you should always serve the Nordic classic fresh and never store it in the refrigerator for more than 2 to 3 days.

Pregnant women should be especially careful with recipes that use raw fish, as it may be contaminated with listeria, which can lead to listeriosis. Should you not want to give up your herring salad despite pregnancy, you can resort to canned food. These are previously heated to 70 °C, thereby killing the pathogens.

If you catch your own herring for this delicious salad, be sure to freeze it before eating, as the fish may be infested with the so-called herring worm (anisakis). These die at a temperature below -20 °C or during baking / frying. Soaking in brine does not render the parasites harmless.

Can you freeze herring salad?

Here there is a very clear answer: No! The freezing process damages the cell walls of the fish fillets, causing water to leak out. This not only makes the herring salad lose flavor, but also gives it a mushy consistency.

What is the difference with red herring salad?

This popular grandma’s style variant differs mainly in that it gets its color from beet. This is cooked and added to the salad as small pieces. The aroma of beets gives the recipe a delicious taste.
