If you don’t have a deep fryer but still don’t want to miss out on golden brown fries, you can also prepare the delicious potato sticks in a pot. However, there are a few things you need to keep in mind and you will need a kitchen thermometer to check the temperature of the oil. This makes the preparation a little more elaborate.

Hot grease is a source of danger and can cause serious burns on contact. For this reason, you should take extra care with this method of preparation and never leave the oil unattended on the stove.

  • 500 g potatoes (waxy / mainly waxy)
  • 3 L sunflower oil (for frying)
  • Salt

Wash your potatoes thoroughly and cut them into 1 to 1.5 cm sticks. Place the fries, still raw, in a large bowl and cover completely with water to draw the starch out of the fries. Pour the cloudy water directly again, fill up with fresh, cold water and soak the fries in it for 15 - 20 minutes. Pour off the water and dry your French fries thoroughly with a towel. The drier your fries are, the crispier the result.

Place a large pot of oil on the stove and heat it to 140 °C over medium heat. Now add the fries to the oil with a frying ladle and fry your fries in it for about 3 minutes. Using the strainer*, lift the fries out of the hot fat and drain / cool.

For a golden brown crust, heat the oil to 175 °C. Add in the slightly cooled fries and finish frying the fries until they turn an appetizing color.

Line a large bowl with paper towels and place your finished fries in it. Then season generously with salt and toss the fries in the bowl. The kitchen paper absorbs excess fat in the process. Serve hot and with ketchup or mayonnaise. Ready are your delicious homemade fries.
Tip / Note:

Permanently control the temperature of your fat and make sure that its temperature does not rise above 175 °C. At higher temperatures, the formation of acrylamide increases sharply.
